The range

Backyard smokers to marae-scale cookers.

Thin imported smokers lose heat as fast as they make it. Plate that is thick enough to hold temperature, a firebox that draws and racks you can lift out to clean make the difference.

Offset & reverse-flow smokers

Cylindrical or box smokers with a separate firebox, tuning plates, stainless racks and a thermometer port, on wheels or a trailer.

Spit roasters & hangi cookers

Charcoal spit roasters from lamb-size to whole-beast, and stainless hangi cookers with baskets and steam trays.

Common questions about bBQ smokers, spit roasters and pizza oven stands.

Offset or reverse flow?

Reverse flow gives more even temperature across the chamber and suits people cooking every weekend; a standard offset is simpler and cheaper. We build both and will talk it through with you.

What plate thickness do you use?

Fireboxes are 6 mm and cook chambers 5–6 mm, so the smoker holds temperature in a Franklin winter. Racks and trays are 304 stainless.

Can you build one for a food truck or event?

Yes. Commercial smokers and spits go on a registered trailer or into a truck with the stainless bench and hood work done at the same time.
